2 tbsp butter
4 chicken breasts (Season with 1 tsp ground cumin, paprika, onion powder, garlic powder, and Mexican oregano)
2 medium onions
2 cups shiitake mushrooms
2 cups of chicken broth (or 2 cups hot water + 1 1/2 tbsp chicken bouillon)
1/4 cup crema fresca (Mexican cream) or Half & half (extra creamy use 3/4 of a cup)
2 chipotles in adobo sauce (remove seeds)
3 garlic cloves
8 sun-dried tomatoes or 1/4 cup of tomato sauce
Small bunch of cilantro
Salt & pepper to taste
Instructions:
Season chicken with ground cumin, paprika, onion powder, garlic powder, and Mexican oregano.
Heat olive oil in a pan and soften mushrooms and onions.
Sear the seasoned chicken in the pan for about 3 minutes on each side.
